A friend of ours is a cookbook author (Tasty by Roy Finamore...his latest...). On his website, he has a sample recipe from Tasty for homemade ricotta cheese. David and I make this A LOT! We highly recommend it, and if you want something special for a brunch, made this fresh, toast up some bread, put a dollop of marmadale on top and then some ricotta....heaven.
